These double-decker biscuit letter cakes are a beautiful twist on a current new cake trend which could also be adapted into numbers too. In this tutorial with Claire you will learn how to make, cut out and bake delicious biscuit layers using your own designed letter template, you will also be guided on how to assemble with Swiss Meringue piped buttercream (see PDF recipe), model cute decorative rainbows and clouds, make pastel coloured mermaid tails and finally how to bring it all together.
